The highlight of my visit to the Tsukiji fish market was the maguro auction. During viewing of the frozen maguros laid out eerily like the dead in a mass grave, the buyers methodically inspected the fish of their interest. There is an art to this procedure and every buyer has their methods to determine which maguro to bid on. This man took a piece of meat off the fish using his menacing looking pick and rubbed it slowed between his fingers for several seconds. He then moved onto another fish and repeated the process.
